Taco Soup

Ingredients

1lb hamburger
1 medium onio
1-16 oz. can whole kernel corn
1-16 oz can kidney beans
1-8 oz can tomato sauce
2-14 oz cans sliced or diced tomatoes
1 pkg. taco seasonings
sour cream
Fritos corn chips
cheddar cheese
chopped black olives

Preparation Instructions

l. Brown hamburger and onion which has been minced. Drain off grease. 2. Add corn, tomato sauce, kidney beans, diced tomatoes and taco seasoning- simmer for about 10 minutes or until ready to serve. May be thinned with water if necessary.
3.Put some corn chips in bottom of soup bowls and add soup. Top with a sprinkling of olives, grated cheese and a dollop of sour cream on top. Ummmm. Good!

Easy Broccoli Cheese Soup

Ingredients

1 Carrot
1 Stalk celery
1 small onion
1/2 c. frozen broccoli
1 Can Cream of chicken soup
1 soup can water or milk
1 c. Velveeta Cheese Sauce or cubes

Preparation Instructions

Chop 1st 4 ingredients in blender or food processor. Place in microwave safe dish. Add 1 cup water. Cover and microwave on high for 10 minutes. Pour 1/4 cup of mixture into saucepan. (You may freeze rest of vegetable mix in 1/4 c. portions).

To vegetable mix in pan, add soup and water or milk slowly, stirring until smooth on medium heat. Heat through.  Turn burner to low and add cheese sauce or Velveeta cubes. Stir continuously until cheese melts.
