Recipe Name: Snow on the Mountain

Ingredients

Note: It’s a Debbie Macomber tradition to prepare this meal on New Year’s Day, when her entire family, young and old, get together to reflect on last year’s goals and to put to paper the goals for the coming year.
1.Six to eight cups cooked rice
2.Chicken in gravy (I usually stew a chicken, debone it, and use the broth for making the gravy.)
3.4 sliced tomatoes
4.2 cups chopped raw onions
5.11 oz crispy Chow Mein noodles
6.1 cup sliced celery
7.7 oz sliced green olives (or black if preferred)
8.12 oz shredded cheddar cheese
9.1 lb can crushed pineapple, drained
10.1 cup sliced almonds
11.1 small package coconut

Preparation Instructions

Line up the eleven dishes on the table in the following order. Have your guests start at the rice and build a mountain on their plates with the rest of the ingredients, according to their taste.

Ingredients:

2# boneless chicken
1/2 cup flour
2/3 c salad oil
salt/pepper
1 can pineapple chunks
1 green pepper
1 cup sugar
1 tbsp cornstarch
3/4 cup cider vinegar
1 tsp soy sauce
1/4 tsp ginger
cooked rice

Preparation Instructions:

Coat chicken with flour. Heat oil. Brown chicken. Place in a roasting pan. Sprinkle with Salt/pepper.

Drain juice into measuring cup. add water to make 1 and 1/4 cups. Place in pan. add remaining ingredients (except pineapple chunks and green pepper) and bring to a boil. Boil two minutes. Pour over chicken. Bake at 350 degrees for 20 minutes. Serve over rice.
