Mini Cheesecakes

Ingredients:

1/3 c. graham cracker crumbs
1 Tblspn sugar
1 Tblspn butter or margarine melted
1 - 8 oz pkg Cream Cheese softened
1/4 c. sugar
1 1/2 tsp lemon juice
1/2 tsp grated lemon peel
1/4 tsp vanilla
1 egg
Strawberry, Raspberry or Apricot preserves

Preparation Instructions:

Combine crumbs, sugar and margarine. Press rounded measuring tablespoonful of crumbs onto bottom of six paper lined muffin cups. Bake at 325 degrees for 5 minutes. Combine cream cheese, sugar, juice, peel and vanilla, mixing at medium speed on mixer until blended. Add egg, blend. Pour over crust, filling cups 3/4 full. Bake at 325 degrees for 25 minutes. Cool and chill. Top with spoonful of preserves before serving. Note: can be frozen. Let stand at room temp 40 minutes before serving.

Apple Pudding

Ingredients:

1 cup flour
1 tsp. baking powder
1/2 cup milk
1/2 cup white sugar
1/2 tsp. vanilla
4-6 peeled apples (depending on size)

Preparation Instructions:

Mix flour, baking powder, milk, white sugar and vanilla in bottom of oven proof bowl. Slice peeled apples into this mixture and stir enough to coat apples nicely.

Then add to top of mixture, but not stirring:
1/2 cup brown sugar
2 cups boiling water
Piece of butter or margarine (size of an egg)
Bake at 350 degree, preheated oven until apples and cake batter are nicely browned.

Serve hot as a dessert. Tastes good with ice cream scooped on top.

Ingredients:

1/4C Shortening 1/3C Brown Sugar
2C Flour 2tsp Cinnamon
1Tbsp Sugar
3tsp Baking Powder
1tsp Salt
3/4C Milk
1/4C Butter


Preparation Instructions:

1) Preheat oven to 450 degrees.
2) In large bowl mix the flour, sugar, baking powder, and salt.
3) Cut the shortening into the dry ingredients until it resembles fine crumbs.
4) Stir in just enough milk so dough leaves the side of the bowl and rounds up into a ball.
5)Turn dough onto lightly floured surface. Knead lightly 20-25 times, about 30 seconds.
6) Roll dough out to approx. 11" X 11" X 1/2"
7) Spread on soft butter and sprinkle on the brown sugar, cinnamon mixture.
8) Roll up jelly fashion: mark 10 even slices and cut with thread.
9) Place on a greased pan so they are just barely touching.
10) Bake 15-20 minutes or until centers bubble. Remove from pan immediately.

Apple Bread


Ingredients:

2 tablespoons butter
1/2 cup sugar
1 teaspoon cinnamon
2 Med apples
1/4 cup raisins
1 pkg active dry yeast (1tsp) I use quick rise yeast so rising time is greatly shortened
3/4 cup warm water (105 115 deg f)
1/4 cup sugar
1 teaspoon salt
2 1/4 cup flour
1 3gg
1/4 cup shortening


Preparation Instructions:

Melt butter in a 9x9 baking pan. In a small bowl mix next two ingredients with a fork and sprinkle over melted butter in pan. Peel and cut apples into thin slices and arrange in rows on top of mixture in pan. Sprinkle raisins over apples. In a large bowl mix yeast and water. Add sugar sail and 1 cup of flour. Beat for 2 minutes and then add egg shortening and remainder of flour. Beat until smooth. Drop batter by small spoonfuls over apple and raisins in pan. Cover and let rise in a warm place until dough mixture doubles, approx 50 - 60 min. Heat oven to 375. Bake 30 to 35 minute or until brown on top. Remove from pan immediately buy turning upside down on serving plate.

Serve hot with ice cream on top

Peanut Butter Cup Pie


Ingredients:

1 cup peanut butter (creamy or crunchy your choice)
1 graham cracker pie crust (regular or chocolate)
1/2 cup sugar
1 mix of chocolate pudding or 2 cups of ready made pudding

Preparation Instructions:

Melt the peanut butter in microwave, add sugar and stir. Pour the peanut butter sugar mix into the pie crust. Let sit (or place in freezer for about 1-2 minutes to cool off) during this time, if you need to mix the pudding.
Add the pudding over the peanut butter.
Place in fridge, ready to serve in about 10-15 minutes

Total prep time making a mix is about 10 minutes. Using pre-made pudding, about 5 minutes
